A delicious and easy recipe for grilled teriyaki chicken that is perfect for any occasion.

- 2 pounds boneless, skinless chicken thighs
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup honey
- 1/4 cup rice vinegar
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon sesame oil
- 1 teaspoon black pepper
- 1 teaspoon cornstarch (optional, for thickening)
- 2 tablespoons water (if using cornstarch)
- Sesame seeds and sliced green onions for garnish
Instructions
- In a medium bowl, whisk together the soy sauce, brown sugar, honey, rice vinegar, garlic, ginger, sesame oil, and black pepper until well combined.
- Reserve 1/2 cup of the marinade in a separate bowl for later use.
- Place the chicken thighs in a large resealable plastic bag or shallow dish and pour the remaining marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade and discard the used marinade.
- Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F.
- If you reserved marinade, you can thicken it by mixing the cornstarch with water in a small bowl and then adding it to the marinade in a saucepan. Heat over medium heat until it thickens, stirring constantly.
- Once the chicken is cooked, remove it from the grill and let it rest for 5 minutes before slicing.
- Drizzle the thickened reserved marinade over the sliced chicken and garnish with sesame seeds and sliced green onions.
Notes
- For a spicier kick, add a teaspoon of red pepper flakes to the marinade.
- Serve the grilled chicken over steamed rice or with a side of grilled vegetables for a complete meal.
