A refreshing and delicious Grilled Peach Blueberry Salad perfect for summer.
Ingredients

- 2 ripe peaches, halved and pitted
- 1 tablespoon olive oil
- 1 cup fresh blueberries
- 4 cups mixed salad greens (such as arugula, spinach, and romaine)
- 1/4 cup crumbled feta cheese
- 1/4 cup walnuts, chopped
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Preheat the grill to medium heat. Brush the cut sides of the peach halves with olive oil.
- Place the peaches cut side down on the grill. Grill for about 4-5 minutes until grill marks appear and the peaches are slightly softened. Remove from the grill and let cool slightly.
- In a large bowl, combine the mixed salad greens, blueberries, feta cheese, and walnuts.
- In a small bowl, whisk together the balsamic vinegar, honey, salt, and pepper.
- Slice the grilled peaches and add them to the salad. Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately, or chill for 15-20 minutes for a refreshing cold salad.
Notes
- For added protein, consider adding grilled chicken or shrimp to the salad.
- Substitute goat cheese for feta for a different flavor profile.
