Ingredients

  • 2 large chicken breasts (about 1 pound)
  • 1 ripe mango, peeled and diced
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a medium bowl, combine the diced mango, lime juice, honey, olive oil, garlic, cumin, chili powder, salt, and black pepper. Mix well to create a marinade.
  3. Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for later. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  4. Remove the chicken from the marinade and discard the used marinade. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is cooked through.
  5. While the chicken is grilling, heat the reserved marinade in a small saucepan over medium heat until it comes to a simmer. Cook for about 5 minutes, then remove from heat.
  6. Once the chicken is done, let it rest for 5 minutes before slicing. Drizzle the heated marinade over the sliced chicken and garnish with fresh cilantro.

Notes

  • For a spicier kick, add 1/2 teaspoon of cayenne pepper to the marinade or serve with sliced jalapeños.
  • Substitute the chicken breasts with boneless, skinless chicken thighs for a juicier option. Adjust grilling time as needed.
