Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Lemon wedges, for serving
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and black pepper to create the marinade.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring each fillet is well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat the grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stovetop.
  4. Remove the salmon from the marinade and let any excess drip off. Discard the marinade.
  5. Place the salmon fillets skin-side down on the grill. Cook for about 4-5 minutes, then carefully flip and grill for another 3-4 minutes, or until the salmon flakes easily with a fork and is cooked through.
  6. Remove the salmon from the grill and let it rest for a couple of minutes. Serve with lemon wedges and garnish with fresh parsley.
