Description

Delicious grilled chicken wrapped in fresh lettuce with a tangy orange and balsamic glaze.


Ingredients

  • 2 large chicken breasts (about 1 pound)
  • 1/4 cup balsamic vinegar
  • 1/4 cup fresh orange juice
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 head of butter lettuce or romaine lettuce, leaves separated
  • 1 cup shredded carrots
  • 1/2 cup sliced cucumbers
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/4 cup chopped peanuts or cashews (optional)

Instructions

  1. In a small bowl, whisk together balsamic vinegar, orange juice, honey, garlic powder, onion powder, salt, and black pepper to create the marinade.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
  4. Brush the grill grates with olive oil to prevent sticking. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes.
  5. Slice the grilled chicken into thin strips. To assemble the wraps, place a few strips of chicken on a lettuce leaf, and top with shredded carrots, sliced cucumbers, and chopped cilantro and peanuts or cashews if desired.
  6. Serve immediately and enjoy your fresh and flavorful wraps!

Notes

  • For a spicier kick, add sliced jalapeños or a drizzle of sriracha to the wraps.
  • You can also substitute the chicken with grilled shrimp or tofu for a different protein option.
