Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 4 slices of Swiss cheese
  • 4 slices of deli ham
  • 4 whole wheat sandwich rolls
  • 1/4 cup Dijon mustard
  • 1/4 cup mayonnaise
  • 1 tablespoon olive oil
  • Fresh spinach leaves (optional, for garnish)

Instructions

  1. Preheat the grill to medium-high heat. While the grill is heating, flatten the chicken breasts to an even thickness using a meat mallet or rolling pin, about 1/2 inch thick.
  2. Season both sides of the chicken breasts with salt, black pepper, garlic powder, and paprika.
  3. Brush the grill grates with olive oil to prevent sticking. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  4. During the last 2 minutes of grilling, place a slice of ham and a slice of Swiss cheese on each chicken breast to melt.
  5. While the chicken is finishing, slice the sandwich rolls in half and toast them lightly on the grill for about 1-2 minutes.
  6. In a small bowl, mix the Dijon mustard and mayonnaise together. Spread the mixture on the inside of each toasted roll.
  7. Once the chicken is cooked and the cheese is melted, remove it from the grill. Place each chicken breast on the bottom half of the sandwich rolls. Top with fresh spinach leaves if desired, then close the sandwiches with the top halves of the rolls.
  8. Serve immediately while warm and enjoy your delicious grilled chicken cordon bleu sandwiches!
