Ingredients

  • 2 cups granulated sugar
  • 1 cup unsalted butter, cubed
  • 1 cup dark chocolate chips
  • 1 cup brewed espresso, cooled
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
  2. In a medium saucepan over low heat, combine the sugar, butter, and dark chocolate chips. Stir until melted and smooth. Remove from heat and let it cool slightly.
  3. In a large mixing bowl, whisk together the cooled espresso, eggs, and vanilla extract until well combined.
  4. Gradually add the melted chocolate mixture to the egg mixture, stirring continuously until smooth.
  5. In another bowl, sift together the flour, cocoa powder, salt, and baking powder.
  6. Slowly fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  9. Allow the cake to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
