  • 1 cup molasses
  • 1 cup hot water
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, ginger, cinnamon, nutmeg, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the molasses until fully combined. Gradually add the dry ingredients to the wet mixture, alternating with the hot water, beginning and ending with the dry ingredients. Mix until just combined.
  5. Pour the batter into the prepared baking dish and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Once baked, remove the cake from the oven and let it cool for about 10 minutes. Using the handle of a wooden spoon, poke holes all over the cake, about 1 inch apart.
  7. In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form. Pour the heavy cream mixture over the warm cake, allowing it to fill the holes.
  8. Sprinkle the ground cinnamon over the top of the cake. Let the cake cool completely, then refrigerate for at least 2 hours before serving.
