A delicious and moist German Chocolate Poke Cake that is soaked with sweetened condensed milk and topped with a rich coconut and pecan mixture, finished with whipped cream.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda

  • 1 cup buttermilk, room temperature
  • ½ cup vegetable oil

  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 (12-ounce) package German chocolate, chopped
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 (14-ounce) can sweetened condensed milk
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk until well blended.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until smooth.
  4. Carefully stir in the boiling water until well combined. The batter will be thin.
  5. Pour the batter into the prepared baking pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. While the cake is baking, melt the German chocolate in a microwave or double boiler until smooth.
  7. Once the cake is done, remove it from the oven and let it cool for about 10 minutes. Use the handle of a wooden spoon to poke holes all over the top of the cake.
  8. Pour the sweetened condensed milk over the warm cake, allowing it to soak into the holes.
  9. In a medium bowl, combine the melted chocolate, coconut, and pecans. Spread this mixture evenly over the cake.
  10. Allow the cake to cool completely, then refrigerate for at least 2 hours.
  11. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread the whipped cream over the cooled cake before serving.

Notes

  • For a richer flavor, consider adding a layer of chocolate ganache on top of the whipped cream.
  • You can substitute walnuts for pecans if preferred.
