- 2 pounds boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon dried Italian herbs (or 1 tablespoon fresh herbs)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, whisk together the olive oil, Parmesan cheese, minced garlic, Italian herbs, salt, black pepper, and lemon juice until well combined.
- Add the chicken breasts to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade and let any excess drip off. Discard the remaining marinade.
- Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is no longer pink in the center.
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Garnish with chopped fresh parsley before serving.
Notes
- For a spicy kick, add 1/2 teaspoon of red pepper flakes to the marinade.
- Serve the grilled chicken over a bed of mixed greens or with roasted vegetables for a complete meal.
