- 2 ribeye steaks (about 1 inch thick, 12–16 ounces each)
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)
- 1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)
- Salt and pepper to taste
Instructions
- Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook more evenly.
- Preheat a cast-iron skillet or grill pan over medium-high heat. Add the olive oil and let it heat until shimmering.
- Season both sides of the steaks generously with salt and pepper.
- Place the steaks in the hot skillet and sear for about 4-5 minutes on one side without moving them.
- Flip the steaks and add the butter, minced garlic, rosemary, and thyme to the skillet.
- As the butter melts, use a spoon to baste the steaks with the melted garlic butter for about 4-5 more minutes, or until they reach your desired level of doneness (135°F for medium-rare, 145°F for medium).
- Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute.
- Serve the steaks drizzled with the garlic butter from the pan.

- For a smoky flavor, add a teaspoon of smoked paprika to the seasoning.
