  • 4 cloves garlic, minced

  • 1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)
  • Salt and pepper to taste

Instructions

  1. Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook more evenly.
  2. Preheat a cast-iron skillet or grill pan over medium-high heat. Add the olive oil and let it heat until shimmering.
  3. Season both sides of the steaks generously with salt and pepper.
  4. Place the steaks in the hot skillet and sear for about 4-5 minutes on one side without moving them.
  5. Flip the steaks and add the butter, minced garlic, rosemary, and thyme to the skillet.
  6. As the butter melts, use a spoon to baste the steaks with the melted garlic butter for about 4-5 more minutes, or until they reach your desired level of doneness (135°F for medium-rare, 145°F for medium).
  7. Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute.
