Ingredients

  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 2 cups frozen sweet corn
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  2. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and cook for 6-7 minutes on each side, or until the chicken is cooked through and has a nice golden color. Remove the chicken from the skillet and set aside.
  3. In the same skillet, pour in the heavy cream and bring it to a gentle simmer. Stir in the frozen corn and cook for about 5 minutes, allowing the corn to heat through.
  4. Add the grated Parmesan cheese and red pepper flakes (if using) to the skillet, stirring until the cheese is melted and the mixture is creamy.
  5. Return the cooked chicken to the skillet, spooning the creamed corn mixture over the top. Allow it to simmer for an additional 2-3 minutes to heat the chicken through.
  6. Garnish with chopped fresh parsley before serving.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
