  • Salt and freshly ground black pepper to taste
  • 1/4 cup freshly grated Parmesan cheese

Instructions

  1. Boil water in a large pot and cook the cheese tortellini according to the package instructions. Drain and set aside.
  2. In a spacious skillet, warm the olive oil over medium heat.
  3. Add the ground beef and sauté until browned, about 5 to 7 minutes. Drain excess fat if necessary.
  4. Add the minced garlic and optional crushed red pepper, cooking for an additional 1 to 2 minutes until aromatic.
  5. Incorporate the fresh spinach, stirring until wilted, about 2 to 3 minutes.
  6. Lower the heat and add the butter, stirring until melted and combined.
  7. Gently fold in the cooked tortellini, ensuring they are well-coated with the sauce.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with grated Parmesan cheese and chopped parsley.
