Instructions
- Boil water in a large pot and cook the cheese tortellini according to the package instructions. Drain and set aside.
- In a spacious skillet, warm the olive oil over medium heat.

- Add the minced garlic and optional crushed red pepper, cooking for an additional 1 to 2 minutes until aromatic.
- Incorporate the fresh spinach, stirring until wilted, about 2 to 3 minutes.
- Lower the heat and add the butter, stirring until melted and combined.
- Gently fold in the cooked tortellini, ensuring they are well-coated with the sauce.
- Season with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan cheese and chopped parsley.
