  • ¼ cup heavy cream
  • 2 teaspoons vanilla extract
  • Food coloring (blue, purple, pink)
  • Edible glitter or star sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Carefully stir in the boiling water until the batter is smooth. The batter will be thin.
  5. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. While the cupcakes are cooling, prepare the buttercream frosting. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with the heavy cream, and mix until smooth. Stir in the vanilla extract.
  8. Divide the frosting into three bowls and color each with blue, purple, and pink food coloring.
  9. Using a piping bag or a spatula, frost the cooled cupcakes with the different colored frostings to create a galaxy effect. Swirl the colors together for a marbled look.
  10. If desired, sprinkle edible glitter or star sprinkles on top for a starry effect.
