A flavorful and tender French Onion Braised Chuck Roast, perfect for a comforting meal.


Ingredients

  • 2 to 3 pounds chuck roast
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 1 cup dry white wine
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Season the chuck roast with salt and pepper, then sear it in the hot oil for about 4-5 minutes on each side until browned. Remove the roast and set aside.
  3. In the same pot, add the sliced onions and cook for about 10-15 minutes, stirring occasionally, until they are caramelized and golden brown.
  4. Add the minced garlic, thyme, and rosemary to the onions, cooking for an additional 1-2 minutes until fragrant.
  5. Pour in the beef broth, white wine, and Worcestershire sauce, scraping the bottom of the pot to release any browned bits.
  6. Return the chuck roast to the pot and add the bay leaf. Bring the mixture to a simmer.
  7. Cover the pot with a lid and transfer it to the preheated oven. Braise for 3 to 4 hours, or until the meat is tender and easily shreds with a fork.
  8. Once done, remove the pot from the oven and let it rest for 10 minutes. Discard the bay leaf before serving.
  9. Garnish with fresh parsley before slicing and serving.

Notes

  • For a richer flavor, add a splash of balsamic vinegar to the braising liquid.
  • Serve the braised roast over mashed potatoes or egg noodles for a hearty meal.
