Description
A flavorful and tender French Onion Braised Chuck Roast, perfect for a comforting meal.
Ingredients
Scale
- 2 to 3 pounds chuck roast
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 1 cup dry white wine
- 2 tablespoons Worcestershire sauce
- 1 bay leaf
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 325°F (163°C).
- In a large Dutch oven, heat the olive oil over medium-high heat. Season the chuck roast with salt and pepper, then sear it in the hot oil for about 4-5 minutes on each side until browned. Remove the roast and set aside.
- In the same pot, add the sliced onions and cook for about 10-15 minutes, stirring occasionally, until they are caramelized and golden brown.
- Add the minced garlic, thyme, and rosemary to the onions, cooking for an additional 1-2 minutes until fragrant.
- Pour in the beef broth, white wine, and Worcestershire sauce, scraping the bottom of the pot to release any browned bits.
- Return the chuck roast to the pot and add the bay leaf. Bring the mixture to a simmer.
- Cover the pot with a lid and transfer it to the preheated oven. Braise for 3 to 4 hours, or until the meat is tender and easily shreds with a fork.
- Once done, remove the pot from the oven and let it rest for 10 minutes. Discard the bay leaf before serving.
- Garnish with fresh parsley before slicing and serving.
Notes
- For a richer flavor, add a splash of balsamic vinegar to the braising liquid.
- Serve the braised roast over mashed potatoes or egg noodles for a hearty meal.
