- 2 pounds bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup Dijon mustard
- 1/4 cup honey
- 1/4 cup chicken broth
- 2 tablespoons apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper. Once the oil is hot, add the chicken skin-side down and sear for about 5-7 minutes until the skin is golden brown. Flip the chicken and cook for another 3-4 minutes.
- In a bowl, whisk together the Dijon mustard, honey, chicken broth, apple cider vinegar, minced garlic, and thyme.
- Pour the mustard mixture over the chicken in the skillet, making sure to coat each piece well.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove the skillet from the oven and let the chicken rest for 5 minutes. Garnish with chopped parsley before serving.
Notes
- For a creamier sauce, stir in 1/4 cup of heavy cream to the mustard mixture before pouring it over the chicken.
- Serve with roasted vegetables or a side salad for a complete meal.
- You can also substitute chicken thighs with chicken breasts for a leaner option.
