  • 2 pounds bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup Dijon mustard
  • 1/4 cup honey
  • 1/4 cup chicken broth
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper. Once the oil is hot, add the chicken skin-side down and sear for about 5-7 minutes until the skin is golden brown. Flip the chicken and cook for another 3-4 minutes.
  3. In a bowl, whisk together the Dijon mustard, honey, chicken broth, apple cider vinegar, minced garlic, and thyme.
  4. Pour the mustard mixture over the chicken in the skillet, making sure to coat each piece well.
  5. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove the skillet from the oven and let the chicken rest for 5 minutes. Garnish with chopped parsley before serving.

  • For a creamier sauce, stir in 1/4 cup of heavy cream to the mustard mixture before pouring it over the chicken.
