Description

A simple and delicious dinner delight featuring folded tortillas filled with a savory chicken mixture, topped with cheese and baked to perfection.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheddar cheese
  • 8 large flour tortillas
  • 1 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, cumin, and chili powder. Mix well until all ingredients are evenly coated.
  3. Take one tortilla and place about 1/3 cup of the chicken mixture in the center. Fold the sides of the tortilla over the filling, then roll it up tightly. Repeat with the remaining tortillas.
  4. Place the folded tortillas seam-side down in a greased 9×13-inch baking dish.
  5. Pour any remaining chicken mixture over the top of the tortillas, then sprinkle with shredded cheddar cheese.
  6. Cover the baking dish with aluminum foil and bake for 20 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Let it cool for 5 minutes before serving. Drizzle with sour cream and garnish with chopped cilantro if desired.

Notes

  • For a vegetarian option, substitute the chicken with sautéed bell peppers and mushrooms.
  • Add sliced jalapeños or diced green chilies to the filling for an extra kick.
