A simple and delicious dinner delight featuring folded tortillas filled with a savory chicken mixture, topped with cheese and baked to perfection.

- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheddar cheese
- 8 large flour tortillas
- 1 cup sour cream
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, cumin, and chili powder. Mix well until all ingredients are evenly coated.
- Take one tortilla and place about 1/3 cup of the chicken mixture in the center. Fold the sides of the tortilla over the filling, then roll it up tightly. Repeat with the remaining tortillas.
- Place the folded tortillas seam-side down in a greased 9×13-inch baking dish.
- Pour any remaining chicken mixture over the top of the tortillas, then sprinkle with shredded cheddar cheese.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Let it cool for 5 minutes before serving. Drizzle with sour cream and garnish with chopped cilantro if desired.
Notes
- For a vegetarian option, substitute the chicken with sautéed bell peppers and mushrooms.
- Add sliced jalapeños or diced green chilies to the filling for an extra kick.
