Description

Ingredients

  • 2 large eggs
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon sugar
  • Butter for cooking
  • Powdered sugar for serving
  • Maple syrup for serving

Instructions

  1. In a mixing bowl, separate the egg yolks and whites.
  2. In the bowl with the yolks, add milk, vanilla extract, flour, baking powder, and sugar. Mix until smooth.
  3. In another bowl, beat the egg whites until stiff peaks form.
  4. Gently fold the egg whites into the yolk mixture until just combined.
  5. Heat a non-stick skillet over low heat and add a little butter.
  6. Pour a scoop of the batter into the skillet and cover with a lid. Cook for about 4-5 minutes until the bottom is golden brown.
  7. Carefully flip the pancake and cook for another 4-5 minutes until cooked through.
  8. Repeat with the remaining batter, stacking the pancakes as you go.
  9. Serve warm, dusted with powdered sugar and drizzled with maple syrup.
