Description

Fluffy Cottage Cheese Blueberry Cloud Bread is a light and airy bread made with cottage cheese and fresh blueberries, perfect for a healthy snack or breakfast.


Ingredients

  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cottage cheese and eggs. Use a hand mixer or whisk to blend until smooth and creamy.
  3. Add the almond flour, coconut flour, baking powder, salt, and vanilla extract to the mixture. Mix until well combined.
  4. Gently fold in the fresh blueberries and honey, if using, until evenly distributed.
  5. Spoon the batter onto the prepared baking sheet, forming 6-8 mounds.
  6. Bake in the preheated oven for 25-30 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
