  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 8 cups romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1/4 cup cherry tomatoes, halved (optional)
  • Lemon wedges for serving (optional)

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Season the chicken breasts with garlic powder, paprika, salt, and pepper.
  3. Set up a breading station: Place the flour in one shallow dish, whisk the eggs in a second dish, and combine the panko breadcrumbs and Parmesan cheese in a third dish.
  4. Dredge each chicken breast in flour, shaking off the excess. Dip into the eggs, then coat with the panko mixture, pressing gently to adhere.
  5. Place the breaded chicken on the prepared baking sheet and bake for 25-30 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F).
  6. While the chicken is baking, prepare the salad by tossing the chopped romaine lettuce with Caesar dressing in a large bowl. Add cherry tomatoes if using.
