A delicious and crispy take on the classic Caesar salad, featuring breaded chicken breasts and fresh romaine lettuce.

- 2 large boneless, skinless chicken breasts (about 1 pound total)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 8 cups romaine lettuce, chopped
- 1/2 cup Caesar dressing
- 1/4 cup cherry tomatoes, halved (optional)
- Lemon wedges for serving (optional)
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Season the chicken breasts with garlic powder, paprika, salt, and pepper.
- Set up a breading station: Place the flour in one shallow dish, whisk the eggs in a second dish, and combine the panko breadcrumbs and Parmesan cheese in a third dish.
- Dredge each chicken breast in flour, shaking off the excess. Dip into the eggs, then coat with the panko mixture, pressing gently to adhere.
- Place the breaded chicken on the prepared baking sheet and bake for 25-30 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F).
- While the chicken is baking, prepare the salad by tossing the chopped romaine lettuce with Caesar dressing in a large bowl. Add cherry tomatoes if using.
- Once the chicken is done, let it rest for 5 minutes before slicing it into strips.
- Serve the salad topped with the crispy chicken strips and additional Parmesan cheese if desired. Garnish with lemon wedges for an extra zing.
Notes
- For added flavor, marinate the chicken in buttermilk for 1-2 hours before breading.
- You can also substitute grilled chicken for a lighter option.
- For a vegetarian twist, use crispy chickpeas instead of chicken.
