A delicious and satisfying breakfast sandwich made with everything bagels, cheesy scrambled eggs, and fresh avocado.
Ingredients

- 2 everything bagels, split and toasted
- 4 large eggs
- 2 tablespoons milk
- Salt and pepper to taste
- 2 tablespoons butter
- 4 slices of cheddar cheese
- 1 ripe avocado, sliced
- Fresh chives, chopped (for garnish)
Instructions
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of butter.
- Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are just set but still creamy, about 3-4 minutes.
- In the last minute of cooking, place a slice of cheddar cheese on top of the eggs to melt.
- In another skillet, melt the remaining tablespoon of butter and place the toasted bagel halves cut side up.
- Assemble the sandwich by placing a generous portion of the cheesy scrambled eggs on the bottom half of each bagel, followed by avocado slices.
- Top with the other half of the bagel and sprinkle with chopped chives for garnish.
Notes
- For a spicier kick, add a few slices of jalapeño or a dash of hot sauce to the eggs.
- You can also substitute the cheddar cheese with cream cheese for a creamier texture.
