Ingredients

  • 2 everything bagels, split and toasted
  • 4 large eggs
  • 2 tablespoons milk
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 4 slices of cheddar cheese
  • 1 ripe avocado, sliced
  • Fresh chives, chopped (for garnish)

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of butter.
  3. Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are just set but still creamy, about 3-4 minutes.
  4. In the last minute of cooking, place a slice of cheddar cheese on top of the eggs to melt.
  5. In another skillet, melt the remaining tablespoon of butter and place the toasted bagel halves cut side up.
  6. Assemble the sandwich by placing a generous portion of the cheesy scrambled eggs on the bottom half of each bagel, followed by avocado slices.
  7. Top with the other half of the bagel and sprinkle with chopped chives for garnish.

Notes

  • For a spicier kick, add a few slices of jalapeño or a dash of hot sauce to the eggs.
