Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon instant espresso powder
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the egg and vanilla extract to the butter mixture, and beat until well combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, instant espresso powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips until evenly distributed throughout the dough.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Flatten each ball slightly with the palm of your hand or the bottom of a glass.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges are set. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a richer flavor, try adding a pinch of sea salt on top of the cookies before baking.
  • You can substitute the semi-sweet chocolate chips with dark chocolate or white chocolate for a different taste.
