Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/3 cup unsalted butter, melted
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup brewed espresso, cooled
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, and melted butter. Mix until well combined.
  3. Stir in the beaten egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the baking soda, salt, flour, and cinnamon (if using).
  5. Gradually add the dry ingredients to the banana mixture, mixing just until combined. Do not overmix.
  6. Fold in the cooled espresso and chopped nuts (if using) until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

  • For a richer flavor, add 1/4 cup of chocolate chips to the batter.
  • Substitute half of the all-purpose flour with whole wheat flour for a healthier option.
