- 2 (6-ounce) sea bass fillets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups fresh spinach
- 1 tablespoon unsalted butter
- 1 tablespoon fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together the olive oil, minced garlic, lemon zest, lemon juice, salt, and black pepper.
- Place the sea bass fillets in a baking dish and pour the lemon-garlic mixture over them, ensuring they are well coated.
- Bake the sea bass in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
- While the fish is baking, heat a large skillet over medium heat. Add the butter and let it melt.
- Add the fresh spinach to the skillet and sauté for about 3-4 minutes, or until wilted. Season with a pinch of salt and pepper.
- Once the sea bass is cooked, remove it from the oven and let it rest for a couple of minutes.
- Serve the sea bass on a plate alongside the sautéed spinach, garnishing with chopped parsley and lemon wedges.
Notes
- For a lighter option, substitute the butter with olive oil when sautéing the spinach.
- You can also add cherry tomatoes or sliced bell peppers to the spinach for added color and flavor.
