  • 4 cups fresh spinach
  • 1 tablespoon unsalted butter
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the olive oil, minced garlic, lemon zest, lemon juice, salt, and black pepper.
  3. Place the sea bass fillets in a baking dish and pour the lemon-garlic mixture over them, ensuring they are well coated.
  4. Bake the sea bass in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  5. While the fish is baking, heat a large skillet over medium heat. Add the butter and let it melt.
  6. Add the fresh spinach to the skillet and sauté for about 3-4 minutes, or until wilted. Season with a pinch of salt and pepper.
  7. Once the sea bass is cooked, remove it from the oven and let it rest for a couple of minutes.
