- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup fresh cilantro, chopped
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 teaspoon red curry paste
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon sesame oil
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, cilantro, green onions, garlic, ginger, soy sauce, fish sauce, lime juice, red curry paste, salt, and black pepper. Mix until all ingredients are well incorporated.
- Form the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet. Drizzle the sesame oil over the meatballs.
- Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown.
- Serve warm with a side of sweet chili sauce for dipping.
Notes
- For added flavor, consider mixing in some chopped bell peppers or carrots into the meatball mixture.
- You can also substitute ground turkey or pork for the chicken for a different taste.
- For a spicier kick, increase the amount of red curry paste or serve with a spicy dipping sauce.
