Instructions

  1. In a medium bowl, combine the crushed Oreo cookies and melted butter. Mix until the crumbs are well coated.
  2. Press the Oreo mixture firmly into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator while preparing the filling.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  4. Gradually add the powdered sugar and vanilla extract, mixing until fully combined and smooth.
  5. In a separate bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until well combined. Be careful not to deflate the whipped cream.
  7. Fold in the chopped Oreo cookies, reserving a few for garnish.
  8. Pour the filling over the chilled crust and spread it evenly. Smooth the top with a spatula.
