Ingredients

  • 1 cup whole milk
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter (for greasing the baking dish)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round baking dish with the butter and set aside.
  2. In a mixing bowl, whisk together the milk, eggs, granulated sugar, vanilla extract, and almond extract until well combined.
  3. Gradually add the flour and salt to the mixture, whisking until smooth and free of lumps.
  4. Pour half of the batter into the prepared baking dish.
  5. Evenly distribute the blackberries over the batter in the dish.
  6. Pour the remaining batter over the blackberries, ensuring they are mostly covered.
  7. Bake in the preheated oven for 35-40 minutes, or until the clafoutis is puffed and golden brown. A toothpick inserted in the center should come out clean.
  8. Allow to cool for about 10 minutes before serving. Dust with powdered sugar if desired.

Notes

  • For a richer flavor, substitute half of the whole milk with heavy cream.
  • You can use other fruits such as cherries, blueberries, or peaches instead of blackberries for a different twist.
