- 2 cups fresh blackberries
- 1 cup whole milk
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1 tablespoon unsalted butter (for greasing the baking dish)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round baking dish with the butter and set aside.
- In a mixing bowl, whisk together the milk, eggs, granulated sugar, vanilla extract, and almond extract until well combined.
- Gradually add the flour and salt to the mixture, whisking until smooth and free of lumps.
- Pour half of the batter into the prepared baking dish.
- Evenly distribute the blackberries over the batter in the dish.
- Pour the remaining batter over the blackberries, ensuring they are mostly covered.
- Bake in the preheated oven for 35-40 minutes, or until the clafoutis is puffed and golden brown. A toothpick inserted in the center should come out clean.
- Allow to cool for about 10 minutes before serving. Dust with powdered sugar if desired.
Notes
- For a richer flavor, substitute half of the whole milk with heavy cream.
- You can use other fruits such as cherries, blueberries, or peaches instead of blackberries for a different twist.
