Description

Delicious and easy-to-make grilled Thai chicken skewers served with a creamy peanut sauce.


Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes
  • 8 wooden skewers, soaked in water for 30 minutes
  • 1/2 cup creamy peanut butter
  • 1/4 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a medium bowl, combine soy sauce, brown sugar, lime juice, garlic, ginger, and red pepper flakes. Add the chicken pieces and marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  2. While the chicken is marinating, prepare the peanut sauce. In a small saucepan over low heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, garlic, and red pepper flakes. Stir until smooth and heated through. Remove from heat and set aside.
  3. Preheat your grill to medium-high heat. Thread the marinated chicken pieces onto the soaked skewers.
  4. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  5. Serve the grilled chicken skewers with the peanut sauce drizzled on top or on the side for dipping.

Notes

  • For extra flavor, add chopped fresh cilantro or green onions to the marinade.
  • You can substitute chicken with shrimp or tofu for a different protein option.
