- 1 pound sirloin steak, cut into 1-inch cubes
- 1 pound baby potatoes, halved
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 medium onion, cut into wedges
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons Dijon mustard
- 2 teaspoons garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
- Skewers (if using wooden skewers, soak in water for 30 minutes)
Instructions
- In a mixing bowl, combine the olive oil, balsamic vinegar, Dijon mustard, garlic powder, dried thyme, smoked paprika, salt, and black pepper, whisking until well blended.
- Add the sirloin cubes and halved baby potatoes, ensuring everything is evenly coated.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for 30 minutes to 2 hours.
- Heat your grill to a medium-high setting.
- Assemble the skewers by alternating the marinated steak, potatoes, red and yellow bell peppers, and onion wedges.
- Grill the skewers for about 10-12 minutes, turning them every few minutes.
- Remove the skewers from the heat and allow them to rest for about 5 minutes before serving.
Notes
- For an added kick, mix in a teaspoon of chili powder to the marinade.
- You can easily swap the steak for chicken or shrimp if you prefer a different protein.
