Ingredients

- 2 large cucumbers, thinly sliced
- 1 small red onion, thinly sliced
- 1/2 cup apple cider vinegar
- 1/4 cup water
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
Instructions
- In a large bowl, combine the sliced cucumbers and red onion.
- In a separate bowl, whisk together the apple cider vinegar, water, sugar, salt, black pepper, and olive oil until the sugar is dissolved.
- Pour the vinegar mixture over the cucumbers and onions, tossing gently to coat.
- Add the dill and mix well.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled as a refreshing side dish.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the dressing.
- You can substitute the cucumbers with zucchini for a different texture and flavor.
