A delightful and easy-to-make creamed spinach fish dinner that combines tender fish fillets with a rich and creamy spinach sauce.


Ingredients

  • 2 (6-ounce) fish fillets (such as tilapia, cod, or salmon)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup fresh spinach, chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon nutmeg (optional)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat. Season the fish fillets with salt and pepper, then place them in the skillet. Cook for about 3-4 minutes on each side until golden brown. Remove the fish from the skillet and set aside.
  3. In the same skillet, add the chopped spinach and cook for 2-3 minutes until wilted.
  4. Lower the heat and stir in the heavy cream, Parmesan cheese, garlic powder, onion powder, and nutmeg (if using). Cook for another 2-3 minutes until the mixture thickens slightly.
  5. Return the fish fillets to the skillet, spooning some of the creamed spinach mixture over the top. Drizzle with lemon juice.
  6. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
  7. Serve hot, garnished with additional Parmesan cheese if desired.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or coconut milk.
  • Add a pinch of red pepper flakes for a spicy kick or toss in some cherry tomatoes for added color and flavor.
