Description
A delightful and easy-to-make creamed spinach fish dinner that combines tender fish fillets with a rich and creamy spinach sauce.

- 2 (6-ounce) fish fillets (such as tilapia, cod, or salmon)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup fresh spinach, chopped
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon nutmeg (optional)
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium heat. Season the fish fillets with salt and pepper, then place them in the skillet. Cook for about 3-4 minutes on each side until golden brown. Remove the fish from the skillet and set aside.
- In the same skillet, add the chopped spinach and cook for 2-3 minutes until wilted.
- Lower the heat and stir in the heavy cream, Parmesan cheese, garlic powder, onion powder, and nutmeg (if using). Cook for another 2-3 minutes until the mixture thickens slightly.
- Return the fish fillets to the skillet, spooning some of the creamed spinach mixture over the top. Drizzle with lemon juice.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve hot, garnished with additional Parmesan cheese if desired.
Notes
- For a lighter version, substitute heavy cream with half-and-half or coconut milk.
- Add a pinch of red pepper flakes for a spicy kick or toss in some cherry tomatoes for added color and flavor.
