Ingredients

  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, red pepper flakes, salt, and pepper.
  3. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for more flavor.
  4. Remove the chicken from the marinade and discard the leftover marinade.
  5. Grill the chicken thighs for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
  7. Slice the chicken and serve it garnished with fresh parsley and lemon wedges.
