- 2 pounds boneless, skinless chicken thighs
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Preheat your grill or grill pan over medium-high heat.
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, red pepper flakes, salt, and pepper.
- Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for more flavor.
- Remove the chicken from the marinade and discard the leftover marinade.
- Grill the chicken thighs for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
- Slice the chicken and serve it garnished with fresh parsley and lemon wedges.
Notes
- For a smoky flavor, add a teaspoon of smoked paprika to the marinade.
- Serve with a side of grilled vegetables or a fresh salad for a complete meal.
