Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let it cool.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  3. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  4. Pour the cream cheese mixture over the cooled crust and spread it evenly. Refrigerate for at least 4 hours or until set.
  5. In a small saucepan, combine blueberries, lemon juice, cornstarch, and water. Cook over medium heat, stirring gently until the mixture starts to thicken and bubble, about 5-7 minutes. Remove from heat and let it cool.
  6. Once the cheesecake is set, top it with the blueberry mixture. Serve chilled and enjoy!
