Ingredients

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup shredded coconut
  • 1 cup pastel-colored chocolate candies (e.g., M&M’s or similar)
  • Green food coloring (optional)
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 10-inch bundt pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined.
  6. Fold in the shredded coconut and half of the pastel-colored chocolate candies.
  7. Pour the batter into the prepared bundt pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 15 minutes before inverting onto a wire rack to cool completely.
  10. Once cooled, dust the top with powdered sugar and decorate with the remaining pastel candies. If desired, mix a few drops of green food coloring into shredded coconut to create ‘grass’ and sprinkle it around the candies.
