A flavorful and easy-to-make Dump-and-Bake Chicken Tzatziki dish that combines tender chicken with a refreshing tzatziki sauce.
Ingredients
Scale
- 2 pounds boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup plain Greek yogurt
- 1 medium cucumber, grated and excess water squeezed out
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
- 1 tablespoon olive oil
- 1 cup cherry tomatoes, halved
- 1 cup crumbled feta cheese
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, place the chicken breasts and season with garlic powder, onion powder, oregano, paprika, salt, and pepper.
- In a separate bowl, combine the Greek yogurt, grated cucumber, lemon juice, dill, and olive oil. Mix well to create the tzatziki sauce.
- Pour half of the tzatziki sauce over the seasoned chicken, making sure to coat it evenly.
- Scatter the cherry tomatoes around the chicken in the baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove the dish from the oven and sprinkle the crumbled feta cheese over the chicken.
- Drizzle the remaining tzatziki sauce over the chicken and tomatoes before serving.
- Garnish with fresh parsley if desired.
Notes
- For a low-carb option, serve the chicken over a bed of mixed greens instead of with rice or pita.
- Add sliced olives or roasted red peppers to the baking dish for extra flavor and color.
