Ingredients

  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup Dr Pepper soda
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • ½ cup unsalted butter, softened (for frosting)
  • 2/3 cup unsweetened cocoa powder (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1/3 cup Dr Pepper soda (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until well blended.
  3. Add the eggs, Dr Pepper, vegetable oil, vanilla extract, and buttermilk to the dry ingredients. Beat on medium speed for about 2 minutes until the batter is smooth and well combined.
  4. Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and transfer to a wire rack to cool completely.
  6. For the frosting, beat the softened butter in a bowl until creamy. Gradually add the cocoa powder and powdered sugar, alternating with the Dr Pepper and vanilla extract. Beat until smooth and fluffy.
  7. Once the cakes are completely cool, place one layer on a serving plate and spread a layer of frosting on top. Place the second layer on top and frost the top and sides of the cake.
  8. Serve immediately or refrigerate for up to 3 days.
