- 1/2 cup fresh lemon juice (about 2–3 lemons)
- 1 tablespoon lemon zest (from 1 lemon)
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, oregano, salt, black pepper, and red pepper flakes (if using).
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
- Preheat your grill or a large skillet over medium-high heat. If using a grill, oil the grates to prevent sticking.
- Remove the chicken from the marinade and let any excess drip off. Discard the marinade.
- Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is golden brown. If using a skillet, cook for the same amount of time, flipping halfway through.
- Once cooked, remove the chicken from the heat and let it rest for 5 minutes.
- Slice the chicken and garnish with chopped fresh parsley before serving.

- For a crispy finish, broil the chicken for an additional 2-3 minutes after grilling.
