Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, finely chopped
  • 1 tablespoon rice vinegar
  • 1 tablespoon canola oil
  • Sliced green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, sea salt, black pepper, and cayenne pepper until well combined.
  3. In another bowl, beat the eggs until frothy.
  4. In a third bowl, pour in the panko breadcrumbs.
  5. Coat each chicken thigh in the seasoned flour, shaking off any excess.
  6. Dip the chicken into the beaten eggs, allowing any extra to drip off.
  7. Roll the chicken in the panko breadcrumbs until fully covered.
  8. Arrange the coated chicken thighs on the prepared baking sheet.
  9. Bake the chicken for 35-40 minutes, or until golden brown and crispy, and the internal temperature reads 165°F (75°C).
  10. While the chicken is baking, prepare the honey garlic glaze by mixing honey, soy sauce, chopped garlic, rice vinegar, and canola oil in a small saucepan.
  11. Heat the mixture over medium heat until it bubbles, then lower the heat and let it simmer for about 5 minutes, stirring occasionally.
  12. Once the chicken is done baking, drizzle the honey garlic sauce over the top and return it to the oven for an additional 5 minutes.
  13. Remove from the oven, sprinkle with sliced green onions, and serve immediately.
