- 1/2 teaspoon cayenne pepper (optional)
- 2 large eggs
- 1 cup panko breadcrumbs
- 1/2 cup honey
- 1/4 cup low-sodium soy sauce
- 4 cloves garlic, finely chopped
- 1 tablespoon rice vinegar
- 1 tablespoon canola oil
- Sliced green onions for garnish

- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, sea salt, black pepper, and cayenne pepper until well combined.
- In another bowl, beat the eggs until frothy.
- In a third bowl, pour in the panko breadcrumbs.
- Coat each chicken thigh in the seasoned flour, shaking off any excess.
- Dip the chicken into the beaten eggs, allowing any extra to drip off.
- Roll the chicken in the panko breadcrumbs until fully covered.
- Arrange the coated chicken thighs on the prepared baking sheet.
- Bake the chicken for 35-40 minutes, or until golden brown and crispy, and the internal temperature reads 165°F (75°C).
- While the chicken is baking, prepare the honey garlic glaze by mixing honey, soy sauce, chopped garlic, rice vinegar, and canola oil in a small saucepan.
- Heat the mixture over medium heat until it bubbles, then lower the heat and let it simmer for about 5 minutes, stirring occasionally.
- Once the chicken is done baking, drizzle the honey garlic sauce over the top and return it to the oven for an additional 5 minutes.
- Remove from the oven, sprinkle with sliced green onions, and serve immediately.
