  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup diced onion
  • 1 cup diced bell pepper (any color)
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 cup shredded cheddar cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Add the chicken to the skillet and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute.
  3. Stir in the rice, chicken broth, cream of mushroom soup, thyme, and paprika. Bring the mixture to a simmer.
  4. Return the chicken to the skillet, nestling it into the rice mixture. Cover the skillet with a lid and reduce the heat to low. Cook for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. If using, sprinkle the shredded cheddar cheese on top during the last 5 minutes of cooking, allowing it to melt.
  6. Once done, remove from heat and let it sit for 5 minutes before serving. Garnish with fresh parsley if desired.
