- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup diced onion
- 1 cup diced bell pepper (any color)
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 can (10.5 ounces) cream of mushroom soup
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 cup shredded cheddar cheese (optional)
- Fresh parsley for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Add the chicken to the skillet and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute.
- Stir in the rice, chicken broth, cream of mushroom soup, thyme, and paprika. Bring the mixture to a simmer.
- Return the chicken to the skillet, nestling it into the rice mixture. Cover the skillet with a lid and reduce the heat to low. Cook for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.
- If using, sprinkle the shredded cheddar cheese on top during the last 5 minutes of cooking, allowing it to melt.
- Once done, remove from heat and let it sit for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
- For added flavor, marinate the chicken in your favorite spices or a bit of lemon juice for 30 minutes before cooking.
- Substitute the cream of mushroom soup with cream of chicken or a homemade white sauce for a different taste.
- You can also add vegetables like peas or carrots for extra nutrition.
