Ingredients

  • 1 scoop vanilla protein powder
  • 2 tablespoons chia seeds
  • 2 tablespoons cocoa powder
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium mixing bowl, combine the almond milk, protein powder, cocoa powder, maple syrup, vanilla extract, and salt. Whisk until smooth and well combined.
  2. Stir in the chia seeds until evenly distributed.
  3. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, or overnight, to allow the chia seeds to thicken the pudding.
  4. Once thickened, give the pudding a good stir. If it’s too thick, you can add a splash more almond milk to reach your desired consistency.
  5. Serve chilled, garnished with fresh berries, nuts, or a dollop of Greek yogurt if desired.
