Ingredients

  • 4 salmon fillets (6 ounces each)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the salmon fillets with salt and pepper, then add them to the skillet, skin-side down. Cook for about 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until cooked through. Remove the salmon from the skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
  4. Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
  5. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese and Italian seasoning, mixing until the cheese is melted and the sauce is creamy.
  6. Return the salmon to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
  7. Serve immediately, garnished with fresh basil if desired.
