Instructions
- Preheat the oven to 325°F.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes.
- Gradually add the granulated sugar and continue to beat until well combined.
- Mix in the vanilla extract.
- Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
- Slowly pour in the melted chocolate while mixing on low speed until fully incorporated.
- Add the sour cream, cocoa powder, and salt, mixing until smooth.
- Pour the cheesecake batter into the pre-made graham cracker crust, smoothing the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for 1 hour.
- Remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.
Notes
- For a richer chocolate flavor, use dark chocolate instead of semi-sweet.
