A rich and creamy dark chocolate raspberry cheesecake that combines the flavors of chocolate and fresh raspberries for a decadent dessert.

- 8 ounces chocolate graham crackers, crushed
- 4 tablespoons unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 8 ounces dark chocolate (70% cocoa), melted and slightly cooled
- 1 cup fresh raspberries
- 1 cup sour cream
- 1/4 cup powdered sugar
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a medium bowl, combine the crushed chocolate graham crackers and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and continue to beat until well combined.
- Add the vanilla extract and eggs, one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
- Slowly pour in the melted dark chocolate and mix until fully incorporated and smooth.
- Gently fold in the fresh raspberries, being careful not to break them apart.
- Pour the cheesecake batter over the crust in the springform pan. Smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- In a small bowl, mix the sour cream, powdered sugar, and lemon juice until smooth. Spread this mixture evenly over the cooled cheesecake.
- Refrigerate the cheesecake for at least 4 hours, or overnight, before serving.
Notes
- For a more intense chocolate flavor, use a higher percentage of dark chocolate or add chocolate chips to the batter.
- Substitute the raspberries with strawberries or blueberries for a different berry flavor, or use a mix of berries for added variety.
