A rich and creamy dark chocolate raspberry cheesecake that combines the flavors of chocolate and fresh raspberries for a decadent dessert.


Ingredients

  • 1 ½ cups chocolate graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh raspberries
  • 8 ounces dark chocolate, melted and slightly cooled

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine the chocolate graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Gradually add 1 cup of sugar and continue to beat until well combined. Mix in the vanilla extract.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Add the sour cream and melted dark chocolate, mixing until fully incorporated.
  8. Gently fold in the fresh raspberries.
  9. Pour the cheesecake batter over the cooled crust in the springform pan.
  10. Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
  11. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  12. Remove the cheesecake from the oven and let it cool to room temperature.
  13. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  14. To serve, carefully remove the sides of the springform pan. Slice and enjoy!
