Description
A rich and creamy dark chocolate raspberry cheesecake that combines the flavors of chocolate and fresh raspberries for a decadent dessert.

- 1 ½ cups chocolate graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup fresh raspberries
- 8 ounces dark chocolate, melted and slightly cooled
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine the chocolate graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add 1 cup of sugar and continue to beat until well combined. Mix in the vanilla extract.
- Add the eggs one at a time, mixing well after each addition.
- Add the sour cream and melted dark chocolate, mixing until fully incorporated.
- Gently fold in the fresh raspberries.
- Pour the cheesecake batter over the cooled crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature.
- Once cooled, refrigerate for at least 4 hours or overnight for best results.
- To serve, carefully remove the sides of the springform pan. Slice and enjoy!
Notes
- For a richer flavor, consider adding a tablespoon of espresso powder to the batter.
- You can also top the cheesecake with additional fresh raspberries or a drizzle of chocolate sauce for an elegant presentation.
