- 1 large cucumber, thinly sliced
- 8 ounces cream cheese, softened
- 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
- 1 teaspoon lemon juice
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 slices of whole grain or white bread
- Butter, softened (optional)
Instructions
- In a mixing bowl, combine the softened cream cheese, dill, lemon juice, garlic powder, salt, and black pepper. Mix until well blended and smooth.
- If desired, spread a thin layer of softened butter on one side of each slice of bread.
- Spread a generous layer of the cream cheese mixture on the unbuttered side of four slices of bread.
- Arrange the cucumber slices evenly over the cream cheese mixture.
- Top with the remaining four slices of bread, cream cheese side down, to create sandwiches.
- Cut each sandwich into quarters or halves, depending on your preference.
- Serve immediately or refrigerate for up to 1 hour before serving for a chilled option.

- For a twist, try adding sliced radishes or smoked salmon for extra flavor.
