- 1 large cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon fresh dill, chopped (optional)
Instructions
- In a large mixing bowl, combine the shredded chicken, diced cucumber, cherry tomatoes, and red onion.
- In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the chicken and vegetable mixture. Stir gently until everything is well coated.
- If using, fold in the fresh dill for added flavor.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
- Serve the salad on a bed of greens or in lettuce wraps for a refreshing low-carb meal.
