Description

A delicious and healthy crustless quiche made with zucchini, tomatoes, and cheese, perfect for any meal.


Ingredients

  • 2 medium zucchinis, grated (about 2 cups)
  • 1 medium onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9-inch pie dish or quiche pan with cooking spray or a little olive oil.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the grated zucchini to the skillet and cook for another 5 minutes, stirring occasionally, until the zucchini is softened and any excess moisture has evaporated. Remove from heat and let cool slightly.
  4. In a large bowl, whisk together the eggs, milk, oregano, garlic powder, salt, and black pepper until well combined.
  5. Stir in the sautéed zucchini and onion mixture, cherry tomatoes, mozzarella cheese, and half of the Parmesan cheese until evenly mixed.
  6. Pour the mixture into the prepared pie dish and sprinkle the remaining Parmesan cheese on top.
  7. Bake in the preheated oven for 30-35 minutes, or until the quiche is set in the center and lightly golden on top.
  8. Allow the quiche to cool for about 10 minutes before slicing. Garnish with fresh basil leaves if desired.

  • For added flavor, include cooked bacon or sausage in the mixture before baking.
  • Substitute the mozzarella cheese with feta or goat cheese for a different taste profile.
