- 3 large sweet potatoes (about 2 pounds), peeled and cubed
- 1/2 cup brown sugar
- 1/4 cup unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup mini marshmallows
- 1/2 cup chopped pecans (optional)
Instructions
- Place the cubed sweet potatoes in the crockpot.
- In a separate bowl, mix together the brown sugar, melted butter, milk, vanilla extract, cinnamon, nutmeg, and salt until well combined.
- Pour the mixture over the sweet potatoes in the crockpot and stir to coat evenly.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the sweet potatoes are tender.
- About 30 minutes before serving, sprinkle the mini marshmallows and chopped pecans (if using) on top of the casserole. Cover and continue to cook until the marshmallows are melted and golden brown.
- Serve warm as a side dish or dessert.
Notes
- For a healthier version, substitute the brown sugar with maple syrup or honey.
