Description

Crispy Potato Cheese Balls are deliciously crunchy on the outside and cheesy on the inside, perfect for a snack or appetizer.


Ingredients

  • 2 large russet potatoes (about 1 pound), peeled and cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup green onions, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (plain or seasoned)
  • Vegetable oil, for frying

Instructions

  1. Boil the cubed potatoes in a large pot of salted water for about 15-20 minutes, or until fork-tender. Drain and let cool slightly.
  2. In a large bowl, mash the potatoes until smooth. Stir in the cheddar cheese, Parmesan cheese, green onions, garlic powder, onion powder, salt, and black pepper until well combined.
  3. Allow the mixture to cool for about 10 minutes. Once cool enough to handle, shape the mixture into small balls, about 1 inch in diameter.
  4. Set up a breading station: Place the flour in one shallow dish, the beaten eggs in another, and the breadcrumbs in a third.
  5. Roll each potato ball first in the flour, then dip it into the beaten eggs, and finally coat it with breadcrumbs. Repeat until all balls are coated.
  6. Heat about 2 inches of vegetable oil in a deep skillet or pot over medium heat until it reaches 350°F.
  7. Carefully add a few potato balls at a time to the hot oil, frying them for about 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  8. Serve warm with your favorite dipping sauce, such as ranch or marinara.

Notes

  • For a spicy kick, add 1/4 teaspoon of cayenne pepper to the potato mixture.
