Ingredients

  • 4 large egg whites, at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • Mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper and draw a 9-inch circle on the parchment as a guide.
  2. In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.
  3. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat on high speed until the mixture is glossy and stiff peaks form. This should take about 5-7 minutes.
  4. Gently fold in the vinegar, cornstarch, and vanilla extract until just combined.
  5. Spoon the meringue onto the prepared parchment paper, using the circle as a guide. Create a slight well in the center to hold the toppings later.
  6. Bake in the preheated oven for 1 hour. Turn off the oven and let the meringue cool completely in the oven with the door slightly ajar. This helps prevent cracking.
  7. Once cooled, whip the heavy cream with the powdered sugar until soft peaks form.
  8. Carefully transfer the meringue to a serving platter. Spread the whipped cream over the top and arrange the mixed berries on top of the cream.
  9. Garnish with mint leaves if desired. Serve immediately or refrigerate for up to 1 hour before serving.

  • For a chocolate twist, add 2 tablespoons of cocoa powder to the meringue mixture before baking.
