Crispy Meringue Pavlova with Fresh Berries delights every bite!

- 4 large egg whites, at room temperature
- 1 cup granulated sugar
- 1 teaspoon white vinegar
- 1 teaspoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- Mint leaves for garnish (optional)
Instructions
- Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper and draw a 9-inch circle on the parchment as a guide.
- In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.
- Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat on high speed until the mixture is glossy and stiff peaks form. This should take about 5-7 minutes.
- Gently fold in the vinegar, cornstarch, and vanilla extract until just combined.
- Spoon the meringue onto the prepared parchment paper, using the circle as a guide. Create a slight well in the center to hold the toppings later.
- Bake in the preheated oven for 1 hour. Turn off the oven and let the meringue cool completely in the oven with the door slightly ajar. This helps prevent cracking.
- Once cooled, whip the heavy cream with the powdered sugar until soft peaks form.
- Carefully transfer the meringue to a serving platter. Spread the whipped cream over the top and arrange the mixed berries on top of the cream.
- Garnish with mint leaves if desired. Serve immediately or refrigerate for up to 1 hour before serving.
Notes
- For a chocolate twist, add 2 tablespoons of cocoa powder to the meringue mixture before baking.
- Experiment with different fruits such as kiwi, peaches, or passion fruit for a unique flavor combination.
